How to leave secret access to an FTP site as insurance?

I started working for the Company to improve the site, then I found out that the Management often just throws and does not pay, I want to protect myself.
Do you have FTP access? leave a secret door, so that you can remove what you made ???

But to remove what they did is already a crime for which you can be punished. It doesn't matter if you got paid or not.
If in doubt about payment - demand advance payment, guarantees, or refuse to work.

I don’t think this is a solution to the problem, work through a guarantor or ask for an intermediate payment
