How to intercept https traffic on android/ios device?

Good day. Day 2 this question does not give me rest. It is impossible to intercept traffic from applications in any way. I remember the times there was a wonderful program from google play "capture ssl" and it made a vpn connection, created certificates and everything worked. Now it all suddenly stopped working. Tried through charles, ssl strip. In charles, the application simply does not trust the certificate, ssl strip does not show anything sensible at all. All applications do not work, abruptly somehow stopped. What? I do not understand? How to do it? Thanks in advance

Use a proxy. The use of your proxy can be configured when connected to a Wi-Fi network.
