How to intercept data over wifi?

Hello everyone,
I have a question about the security of local networks. Imagine this situation: there is one router in the house and a couple of laptops and smartphones are connected to it.
Task: intercept all outgoing request signals in order to study data security and privacy in networks.
Previously, I did not deal with these issues. What should I read / do / etc.?

It's faster:
50% that Dumpper+JumpStart will pull out the WPA password in 10 seconds, and sslstrip will intercept all https authorization (except for cellular ones). If the protection is WEP, then grimwepa will pull out any password in half an hour.
All software works under Linux, except for Dumpper and JumpStart.
To be more precise, 90% of Zyxel routers give the password in 10 seconds through Dumpper.

for traffic analysis, I advise wireshark, this is about analysis ...
and as for trying to intercept the data itself, read about organizing MITM attacks. But there is no point in intercepting protocols such as https ... it still cannot be decrypted.

The short answer is spoofing via nighthawk or cain-and-abel, well, further analysis via ptraffer sniffer
