How to insure against an unscrupulous client, working on his server?

Sometimes it becomes necessary to work with an unfamiliar client and the last stage takes place on his server. How can you insure against dishonesty - just in case. Maybe it's paranoia, but sometimes it's better to be safe than sorry. Perhaps there are some developments, share. Maybe you can somehow connect to the database on your server, etc...

Depending on what we are talking about:
1. Back-end - the code of the current stage must be on your server.
2. Front-End - the easiest way is to give TeamViewer access to the virtual machine by making a browser kiosk out of the virtual machine so that the client can watch, but cannot take this code.
