I would like to get the original data from the scanner without internal processing (super resolution, noise reduction, interpolation / smoothing), i.e. as a matrix of values ​​"scanning step - value per pixel of a linear sensor", in any format. Tell me how to do this using a scanner, and not by connecting the sensor to the microcontroller.

The most raw scans can be obtained through Vuescan (there is a RAW mode).
To get raw data in general, you will have to cut your driver specifically for the desired scanner model.
