All traffic goes through the tunnel in a very simple way: static route to the openvpn server, default route through the ovpn interface
you do NAT for the openvpn interface,
you do traffic marking, to a specific IP \ subnet
, then in routes you direct to which gateway you need to send with this marking

No much experience with Mikrotik, step by step instructions would be very handy.
The same question was raised by the OpenVPN client, the router is connected OK, now you need to send one IP through the OpenVPN client.
