If you can experiment with the chip, then you can try in various ways, up to installing it back on the car, winding up the odometer value for it. After this operation, merge the EEPROM again and see where and what has changed.
You can try to erase the EEPROM on the chip altogether, and then again wind up the value and see what has changed. However, in this case, the firmware may not work as it should.
If you have access to the firmware, then try to disassemble it and find out where the value is written. If the firmware is protected, try to search the network for hacking methods.
If a chip is needed or it is no longer on hand, or it’s just scary, then you can experiment with the same, after downloading the firmware to it and flashing the fuse bits.
