Well... It depends on how exactly you have implemented a mini-cart...
If it's some kind of theme, then find a template (presumably header.php) that displays this cart. Comment it out and add your cart icon with a link to the cart page.
If it's a plugin, then just disable the plugin, etc.
Without more information, no one can tell you for sure.
