How to determine the column by which the list is sorted in top (Linux)?

in top, you can use the < > arrows to toggle which columns to sort by.
Where can I see which column is currently being sorted?

for example htop changes the background of the column header to reflect the current sort.

Press 'f', it will be written there in the title. Here you can also select a column and press 's' to change the sort column explicitly.
