Actually the question is: is it possible somehow (by direct or indirect data) to understand that the operating time indicator in the hard disk was edited? Dropped, rolled back ....
It is clear that this is possible only in special conditions and with the appropriate knowledge. But nevertheless...

Why do you need work? by serial number, see the date of production, this is enough to understand the condition. A disk that has lain on a shelf for 5 years is no better than a disk that has worked for the same 5 years in a server, and maybe even worse. But it's worth testing the disk before / after the purchase, if it has "features", then the tests will show this.
Think logically. If something can be written down, then it can be written down and bypassed. For example, at the stand, flashing a flash via jtag or simply soldering a USB flash drive. In general, buying screws from hand is a so-so idea
