How to deploy a project with different modules?

There is a project with a bunch of modules and for it you need to organize a deployment to several servers. Moreover, each server should have its own bundle of modules.
Has anyone faced this problem and how did you solve it?
Since git is used, is it worth using git submodule?
PS. I thought about deploying projects on one machine, and then copying them to others. If this solution is suitable, then how to organize it correctly?
