How to deal with an upwork customer?

At the moment there are interviews with three applicants (including me). The customer asks to make logo concepts, after which work will begin if they roll him in. I already sent 3 concepts - they didn't like it. In parallel, I see that I added another dude to the interview. Maybe he stupidly collects ideas like that? Has anyone run into this? What are the rights of a freelancer who has been called for an interview?

IMHO, it's better not to mess with such customers. And it doesn't matter if the customer has a history or not. If you have a considerable number of works and a normal portfolio, then to hell with such comrades.
Respect yourself, your nerves and your time. Perhaps in the short term, this approach is not very justified, but in the long term you will only win.

In this issue, there are no specific settings on the upwork. The "correctness" of the interview is determined by the agreement of freelancers to fulfill the client's requests. If you are sure that you have a rich portfolio among logo designers, show examples of your work to the client, this is enough. With a good reputation in the marketplace, wasting time on a project for which no upfront payment has been received is disrespectful and corrupting the client. For such customers, there are 99designs and the like.
