Select all text:
Convert to curves (ctrl+shift+O)

Unlock all layers (layer palette remove locks)
Ctrl + Alt + 2 - Unlock All (unlock all objects)
Ctrl + A - Select all
Ctrl + Shift + O - All fonts to curves

On Windows hotkeys
1) Take all objects (ctrl + A)
2) Convert to curves (ctrl + shift + O)

Illustrator has a huge selection functionality, and even there the selection works on the entire document, and not just on the open page...
Select text objects by a common feature and all at once into curves with one click.
