How to connect PPPoe on Windows 7 through a specific network adapter (if there are several)?

The computer has several network cards, where you can specify connections for PPPoe so that it connects through the first network card, and not through others.

Service name (service name) must be different for different connections. Look with a sniffer what BRAS answer to the PADI package, maybe it's different anyway. You write it in the settings and the connection will be made strictly to a specific BRAS.

At the time of connection, turn off (programmatically of course) unnecessary network interfaces. After connecting, turn it back on. This can be automated with a PowerShell script if required.
Unfortunately Windows does not filter pppoe by interface.
