point 3 of the question is not clear - a phone connected via USB in this case is not a solution at all, maximum emulate a HID device for control.
solutions:
buy/borrow/find an adapter to a TV set or monitor in the trash,
similarly to a video capture card (simple is cheaper than a monitor but more expensive than an adapter) or even a whole IPKVM (expensive)
unattended install, but you will have to choose in the BIOS where to load the computer for installation manually.
as an option, remove the disk from the patient, install the system on another computer and set up remote access.
with Windows and an old computer - a lottery, with Linux is likely to work.
