How to choose the right technology for a diploma?

Now it's time to prepare your thesis. My topic is related to transport logistics and tracking parcels and their movement. I plan to make applications for desktop and smartphone, maybe even a web application if I can't keep up with the desktop. I plan to write the server on a node, I don’t know how to do it differently, yet.
I have to work with maps, is it better to create a separate microservice for processing maps, or do 1 server for the whole project? Is it worth writing a server in typescript (I don’t really know it yet, but I can learn it during development) or simple javascript will do? Which database should I use, or should I use several (worked with mongodb, mysql)?
The main question is: what kind of stack is used to create such applications in 2019? Heard about mean stack but worked with React and not Angular. What should I use so that I don't get a lot of problems with the implementation later?

I recommend watching this interview. There is a lot of water and lamp stories, but closer to the last third, they adequately discuss which technologies are in demand in which projects. And they mention that mean is dead. By the way, there is mern)
