How to choose hardware for 1C SCP, CRM 2.0?

It is necessary to select hardware for 1C 8.3, SCP configuration, CRM 2.0:
1. SCP - 6-8 active users (input of primary documentation, generation of reports) users, 30-40 inactive users (viewing the warehouse, creating 1-2 documents per day per person).
2. CRM 2.0 - 40-50 active users, planned as the main document flow in the company.
3. Accounting for 4-5 people, can work separately in file mode.
From what I read:
A three-link is recommended - a database server, a 1C server, a terminal server.
I will not have a terminal server, because it is expensive, and users have more or less iron.
Web clients are also uninteresting.
Questions:
1. Why distribute the database server and the 1C server to physical machines (virtualization has not been canceled), if this does not increase reliability (both servers are in a single copy), but increases the cost (case, PSU)?
2. How to calculate CPU, RAM and IOPS consumption per user per configuration? Are there typical values?
3. About 20 users I have are in another office, VPN between them. How to calculate the load on the channel?
