How to change these icons?

You can simply replace the image resources, but this is somehow not comme il faut.

these files.
The file - /components/com_contact/helpers/icon.php is responsible for the output of these icons, you can rewrite the names there or add some classes, or replace the icons with font icons, not graphic ones.
