A VPN channel is configured between offices using a Mikrotik router. Recently faced with the problem of lack of bandwidth. The provider cannot give more than 10 megabits of speed. We requested an assessment of the laying of a leased line between offices from a third-party company. We were asked for per-minute traffic and speed statistics on the current channel to estimate the required bandwidth.

By SNMP you can shoot at least every 3 seconds. google://mrtg|munin|cacti
Mikrotik also has a built-in graphics, but it has a minimum resolution of 5 minutes. (Tools->Graphing, then available directly from the login page to the Graphs router)
There is their own external The DUDE.
You can also shoot netflow, this will give more information about what kind, where and what kind of traffic ran, but less accurately in terms of the number of bits | packets / sec.
