Hey! Cool scene.
1) Blender (and other programs) cannot guess your idea, so they unfold meshes according to their own algorithms. This means that you will have to edit the sweep manually.
2) In order for the blender to evenly unfold the meshes, they need to be cut. Select edges, space, mark seam - the blender will cut the unfolded pieces at the seams.
3) The texture does not change due to the fact that the display mode of materials is enabled, not textures. Those. textures from materials in this mode are "more important" than those selected in the image viewer.
4) If you want to apply a texture layer "on top" then you need to know for realtime or rendering.
