How to adjust the amount of memory used in Exchange?

There is a VM with Exchange 2013 on board. Worked on one hypervisor (Windows), transferred to another, reducing the amount of allocated RAM. Exchange in a virtual machine eats up all available RAM, as a result, everything slows down. How can I reduce (in the settings, or through the power shell) the amount of memory that Exchange will take for itself?

It's perfectly normal behavior for the Store.exe process on Exchange to select all available memory. Any manual intervention will degrade performance. Controlled by the msExchESEParamCacheSizeMax setting.
