How should the practice be for a programmer?

I recently noticed that a lot of people on various forums say that the assignments at the end of chapters from programming books are not practice. If this is true, then what should real practice look like for a programmer?

Tasks must be completed - this is an important part of the educational process. But practice is at least a pet project. And even better is working on a commercial project in a team of professionals.
