Postfix - MTA, Mail Transfer Agent, SMTP mail server.
Dovecot - POP3 and IMAP mail server
Phpmailer - class for sending mail via SMTP

Roughly speaking:
postfix - accepts mail from users and delivers it either to another server or to a local folder in one of the supported formats (or even to a database)
dovecot - at the request of a user, gives him mail stored in local storage.
phpmailer is actually a client that allows you to send mail
