You just can’t refuse psychologically, because. you will think that the client will order from another and will not leave, but at the same time, there are enough freelance projects. Please tell me how you deal with this problem.

Take a bunch of orders so that you get three hours of sleep at night. Rake them in emergency mode. Repeat. The third time, when your eyes are bleeding and you dream of the quiet rustle of coffee beans in a jar in your trembling hand, the answer to the client "man, fuck you" will seem intelligent and very polite to you.
Seriously, give up any small things that you do not need. Which eats up time and does not bring much benefit. Yes, just which has already got it. Take on expensive and interesting projects. Type up modern coolness, from which everyone pisses with boiling water, including you. Remember, you don't owe a single line of code to anyone. The very fact that you are overwhelmed already means that you will not starve from the loss of a client that is not very necessary.

Read about the Gantt chart.
Detail down to the level of days or even hours what project you are doing when.
Always leave some margin of time: work 12 hours a day - schedule tasks for 8 hours.
Before you take an order - think about when you will execute it.

Option 1. Do not take at all, it concerns every little thing basically.
Option 2. Take and delegate for a percentage to a friend of the same profile, only with trusted acquaintances.
Option 3. Advise another specialist, you will advise, they will advise you and the customer will be satisfied that they did not send, I use for orders more than 50% not of my profile.
Option 4. Set deadlines with a larger margin than usual, it also pushes back the start date (shitty option, there may be overlaps)
Option 5. Hire an assistant on a regular basis, it will be possible to take more orders.
