How do you know if a VPS provider will give your data to the authorities?

Of course, I am a law-abiding citizen, but I would not want my data to get to Comrade Major if something happens. I understand that no one needs me, but I'm a little paranoid, so it would be nicer to somehow make sure. Well, if you don’t know for sure, then how to minimize the risks? Maybe, for example, look at companies registered in certain countries?

No way.
Of course, the ordinary ordinary user is of little interest to anyone. But if so, pr has the ability to take a snapshot of a car and analyze it slowly - or even give it entirely to a comrade major.
How to minimize? Well, for example, to take all the interesting data to another country, to Holland, for example, where porn is allowed :) There, it’s true that they can be leaked to the Dutch major :)

In the general case - no way, you must immediately proceed from the principle that any person is a spy. No matter how honest people seem, they can change their shoes at any time if they are well paid.
And even if the server owners are guaranteed to be honest people (which of course never happens), then there are still no guarantees that the equipment itself does not have any tabs or vulnerabilities worse than Specter and Meltdown built into it.

The provider is obliged to install such boxes through which traffic is driven. This applies not only to VPS providers, but in fact to everyone. When I had the pleasure of being associated with government offices from 12 years ago, it was already there. In the server room they are obliged to install what they say. Installers from the Office come and do everything themselves. With providers (I can’t vouch for VPS, but this is true about ordinary data centers and Internet providers) it’s the same. Only if there is a pass system, purely in theory, you can cheat, but this threatens with a very real stoppage of activity
