How do you evaluate offers from unknown companies?

Now I am actively looking for a new job, I opened a resume on HH and offers from companies unknown to me began to pour in.
Those. you open the official website, it seems clear that the company is developing some kind of conditional software in the field of security, here they have an office, here they have vacancies. And that's like all the info that there is about them. How to understand that this is a normal company, and not some startup (trying to puff out his cheeks) or (soviet company with bureaucracy and despondency).
those. by what algorithm do you evaluate offers from companies that are unknown to you. As you understand that the company is worthwhile, and it is worth spending your time to go and interview.

what for? what will change from knowing that this is a startup or a bureaucracy?
in any type of company there can be joy and fun, or there can be bureaucracy and despondency.
in large companies, you can’t get rid of bureaucracy, it all depends only on its size and flexibility / penetration.
I have a simple algorithm: if the offer is interesting, I get a job and take a month to get acquainted (although a couple of weeks is enough), if something went wrong, I say goodbye in a month.

Choosing the right place to work

How to understand that this is a normal company
yandexim query "[company name] employee reviews"
How to understand - at the interview.
If the HR immediately idolizes the company / team leader / director - this is a sham. They will make you sing and clap your hands.
soviet company with bureaucracy and despondency
there is nothing wrong with bureaucracy. I described it in the link above. there is no bureaucracy - you will fulfill the whim of the leader's left heel, without clear deadlines and agreed processes. do you need it?

I’m looking to make sure it’s not a galley (outsourcer-integrator) and not a crypto-blockchain startup. The rest can be considered.

Exclusively during the dialogue, with HR by phone - 50% of offers are eliminated, the rest are already at the meeting.
At the meeting, you can evaluate the office of the company (ask for a tour), communicate and draw conclusions, as noted above - "an interview is a two-way process."
