Homemade bluetooth headphones are easy, just get ordinary wired headphones and put a board with a bluetooth receiver + a small battery inside. Google has a lot of homemade bluetooth projects, you can get a sound no worse than expensive factory ones.
And it’s naturally impossible to assemble an analogue of airpods on your knee, at least a microscope will be needed there.
Speaker, amplifier, bluetooth module, battery, wireless charger coil, and all sorts of voltage converters, bms, and other kit. It is unlikely that something like this will work out on your knee - you simply cannot cram everything into a small case. The idea is not viable. What you can try to make from the real one is to convert overhead full-size headphones into wireless ones - there is just a place for all the tinsel.
