Depends on the hypervisor. ESXi can pass the device directly to the virtual machine, then the virtual machine can use it in full, including monitor mode, if your WiFi card can do this. And of course, the host system must have at least two cards - one for controlling the hypervisor, and the second for direct forwarding into the VM. The only network card, of course, will not be allowed to be forwarded by the hypervisor.
