Your question is not very clear what you mean by structure.
Processors have an architecture. It is described quite clearly even on Wikipedia.
The structure of the crystal itself from Intel or AMD can be searched on the Internet, but without a good understanding of electrical engineering, there will be nothing useful there, except for beautiful pictures of a cut processor. And even with a good understanding, there will only be a general impression of the level of equipment at the plants.
