Somehow I came across a dock in which they popularly explained what it is: These "%" and "*"

media-libs/x264-0.0.20111220 [0.0.20110426] USE="interlaced%* -10bit% -custom-cflags% -static-libs%"

Who did not see? Maybe someone knows?

There is a dock called man emerge:

- prefix not enabled (either disabled or removed) [disabled]
* suffix transition to or from the enabled state
% suffix newly added or removed [new flag]
() circumfix forced, masked, or removed [masked flag, for example on another platform]


The states of the installed package and the current one in ports are compared.
In your case, the x264-0.0.20110426 package didn't have any uses. The package x264-0.0.20111220 has the specified users and interlaced is enabled.
