Explain how to configure DNS?

Hello, I re-read a bunch of materials, but I can’t enter, my head is messy.
I need to put WinServer in the company and raise DNS on it. After that, install the Hmailserver mail server. Clients must receive and send mail on the Internet. The company has its own website.
Now questions: what name dns to me to give? Name of the site? how to connect dns with mail server? Do you need a dedicated IP address?

WinServer in the sense of just raising Windows Server? Well, take and install any Windows Server that you like (it is desirable to buy more, of course).
Why raise DNS on it? That is, what task will it perform that your NS cannot cope with it?

Hmailserver can even be installed on a workstation, it doesn't have to be a server Windows

DNS name? How is that? If you need a mailing address, you can use your domain, or create a subdomain for mail.
You need to link through the MX record by editing your domain record.
In the MX record, you need to specify the address of the mail server where the letters will be sent.
for example, specify that
example.com MX 10.20.30.40
office.example.com MX myserver.com
mail.example.com MX 20.30.40.50
it is clear that the MX record must point to a static IP or domain name of the server with a fair IP address. And it is on this server that the mail server should be installed. Well, or on this server there must be port-forwarding to the mail server for SMTP.
