If the recruiter is adequate, in most cases, the ability to program will be clear from the interview and discussion of technical issues. To test skills, if there is any doubt, there are usually a couple of test tasks that are either solved on the spot in a couple of minutes, or given at home, and then such a task should not take more than 15-20 minutes.
Everything else is on probation.
Again, as already mentioned above, in 90% of cases the code is the property of the customer and is closed by the NDA.
Another question is that a person with no projects at all may not be called for an interview at all.
And also personal advice - you don’t just need to repeat typical projects, it’s better to come up with something you need for yourself (even if someone has already done it) - then there will be motivation to finish.
