Do taxi services, music, etc. pay? 30% Google play commission?

Services such as: taxi applications, music listening services, food delivery services, VKontakte, Instagram, etc. Paying 30% tax on in-app purchases within their apps? Whether it's buying a target or a subscription to music? And if not, how do they get around it?

I don’t know how in Google, but they don’t pay in Apple.
they simply bypass - they do not use in-app and process payments themselves.
I think in google the same way.

Taxi services do not pay commissions to markets because a taxi ride is considered a physical service. And physical services (one-to-one) and goods are not burdened by the application store commission, and make it possible to make all payments through a third-party payment system. The exception is one-to-many services, such as group consultations
