Deploying and managing a web server. What is the best and most convenient way?

Tell knowledgeable people how it is now fashionable to manage a remote server for the web?
Given: LEMP with multiple sites. I would like to seamlessly roll different versions of PHP, update NGINX, and other applications. I really like how it works in Docker, but there is an opinion that it is only for development and tests.
