Debian not writing logs?

I noticed that the main logs in /var/log are not written at all, i.e. null
auth.log
syslog
mail.log
apache2/access.log
nginx/access.log
nginx/error.log
all empty
mysql.log was empty... turned it on in the settings - sort of started writing.
maybe they cheated?
How to check?
