Coolorus 2.7 what is the Gamut Lock option for?

In the video, a person works with Gamut lock (mask) but I don't understand what they are for.
Explain to me please.
Why do professionals use it and what does it allow them to do?

It blocks gamma. (oddly enough)
Allows you to use only a certain range of colors for a better choice of palette.
