Consult on working with WordPress?

Hello! Need some advice from wordpress experts :)
Usually I use a different system to create sites, but several clients had requests to create a site on wordpress. Unfortunately, I haven't had much experience with it before (other than downloading the theme, installing and posting), so I need your advice.
1. What is the optimal number of plugins to install on the site? Each plugin can affect server load, is there an optimal amount?
2. Is it true that static pages are an additional load on the system?
3. If you take a menu as an example, the system automatically assigns several classes and id to it. I would like to remove all this. I found hooks on how to completely remove the prescription of id and classes, but if a class is added to a specific item through the system, then it does not display this either.
4. Wordpress has its own “zest” in the form of the fact that it assigns its own specific class to each block, which is extremely difficult to find and change. Such classes include, for example, .sub-menu for the dropdown menu, and .current-menu-item for the active menu item. How to fix it all? A question of principle.

1. Productivity does not depend on quantity. Depends on the quality of each individual plugin.
Sometimes 1 plugin is enough to "kill" a site, and, conversely, a well-chosen pack of 50-100 plugins can work great.
