Can I edit the list of MySQL encodings?

Usually in phpmyadmin we see something like this by default:

But in most cases we do not use all these encodings, we use 1-2, can we somehow configure the list so that the rest are not shown? Or is it necessary to rebuild everything so that even in the source codes there is no support for these encodings?

This makes no sense... If you want to quickly create a bunch of fields, use queries, not a wizard.
