Best practices for networking on Mikrotik using VPN?

There is a central office. There are branches. Everywhere are Mikrotik.
How optimally to make one network? What VPN technology to use?
Which VPN protocol is best supported by Mikrotik? L2TP+IPSEC or SSTP?
OpenVPN, as I understand it, is it better not to use it?
What is the best way to set up a connection? The central office the server, and branches clients?

L2TP+IPSEC, central office as a server, the rest are clients

If you need a single broadcast domain with all the consequences, then use either EoIP or PPTP(BCP).
if you need a regular L3 vpn, then the cheapest is the ipip tunnel, since it has the smallest overhead.
