As such, there is no general, in principle, it changes quite a lot from version to version. But to get into the topic:
1) You should definitely start by reading "Asterisk: the future of telephony", but it's outdated, but it's worth starting with it. grab 60-70% of everything you need. Perhaps even stop at the versions suitable for the book.
2) Documentation for each version.
All sorts of video courses \ tutorials are fierce crap. Read the book, the documentation will become clear, and then nothing is needed. If something needs to be done, sit down and do it without prompting.

Not a single book and not a single tutorial will give a competent understanding of all sorts of related things like dhcp \ dns \ tftp \ network jokes and related, which are not required but can be very important, any good book on the general unix \ linux device is already on them or for a specific bsd distribution like\debian\centos-rhel etc. .
