Are offline alternatives to online services relevant, or open source analogues for installation on your servers?

This question has been bothering me for a long time. Undoubtedly, online services are very convenient, but in terms of information security and data privacy, many questions remain. It’s not that I have a lot of secret data, but from the very beginning of the boom of online services, paranoia has been tormenting me, so I don’t use anything other than mail) I don’t think I’m the only one. Even if the service itself is secure and does not touch your data under any circumstances, it can be available to an attacker at any time if he somehow gets your passwords. There are even cases of online services being hacked. There are almost no services that store data in encrypted form, and they are already decrypted locally by the user.
In this regard, there are ideas to write some of the necessary software for personal use with data encryption and subsequent synchronization with online storages. I understand that 95% of users of online services meet their requirements, but how much more secure analogues are needed for the other 5%? I think such analogues are important for large commercial organizations.

But, they deliver superior availability, faster product development, or easier and cheaper business start-ups, saving you time and allowing you to focus on your business.
In many cases, you should take advantage of the competitive advantage of the cloud, unless you have government/financial secrecy of course. In business, you have to be flexible.
Those who keep rented VPS\VDS or hardware servers often forget about the availability of physical storage media in the DC, about the possibility of intercepting traffic inside the DC. Therefore, before making a decision, consider what characteristics the server in the DC should have to support the operation of the service + the load from the crypto disk and crypto tunnels. Compare with the cost of your hardware server room. And compare with the solution for the cloud. And choose what fits within your budget.
Also remember that no cloud cancels backups outside the cloud.
In my opinion, the very existence of the same ownCloud will be the answer to your question.
It is relevant and popular if this service is really needed, as already said, there is ownCloud, ttRSS, btsync, rtorrent / rutorrent, iRedMail, all kinds of web explorers, galleries and a bunch of other services for their servers. I keep almost everything on my own capacities, with the exception of evernote, since I didn’t find a replacement for it to be installed on my server and it’s not even a matter of paranoia, I consider my servers simply more reliable, more flexible and faster.
Creating / buying / installing software at home or using clouds / services is a matter of economics. In fact, it all comes down to a choice - either make capital investments and reduce your operating expenses, or do not invest capital and transfer everything to operating expenses. CAPEX vs. It's called OPEX. Data safety, privacy - this is all a question from the same place by and large. Either you invest in additional data protection and store everything on your own, or you give it to those who will take care of your data instead of you. A private network and private software can also be broken, like a cloud service, this is a matter of costs for the attacking side.
