Depends on the specific goals and detail of the designed models, the field of study (clinical anatomy, modeling of cavities, modeling of the skeleton, the shape and position of only the main organs or modeling additionally their internal structure, gastrointestinal tract, heart, etc.)
If we talk about the general level, then it will fit perfectly different anatomical atlases - google to help.
It should be understood that any anatomical atlas shows the approximate geometry and position of organs, their size and shape do not always correspond to reality.
If you need to make the most realistic models - this is the processing of CT / MRI. There are DICOM viewers for this, but there are no open bases in the Russian Federation. You can separately google about automatic segmentation of organs, but here you need to program.
It is also useful to watch video lectures on YouTube, there are plenty of them.
Books can also be advised only on the basis of the direction of activity - there are a lot of narrow areas in medicine.
I recommend always relying on several (3 or more) sources to find answers to questions regarding anatomy. There are many resources on the Internet that are about medical, but are filled with people who do not understand anything about this, they make content for the sake of content

@Moskus

There are several books by different authors with the same title - "Anatomy for Artists". Take one, for example - Yenyo Barchai, it is probably the most detailed.
