XenCenter not showing console on some VMs?

I think this is due to the fact that this system is not officially supported.

It can, of course, be started if it is based on debian, but I think this does not make sense, since the xenserver has a different purpose. Try ssh, vnc, maybe it will work and it will suit you.
For your purposes it is more logical to use virtualbox or vmware.
