Woocommerce categories or attributes?

New to wordpress. Guys tell me please.
I'm trying to make an online store. There is a Parent category Kitchens , there are child categories Classics , Hi -tech , etc.
1) What is the best way to proceed? Create category tree? Or One category and then assign a Label to each product (according to the category)? It is very important to understand what is best in terms of SEO.
It is assumed that in the Parent category there will be a filter, which makes it possible to filter by subcategories / tags.
2) What should I do if I have a fixed price for some goods, and for some the price is per linear meter? If I specify the price per room. meter customers have a misunderstanding ..

1 - nested categories
2 - if it depends on the category, then in the templates where the price is displayed, check the category and show units of measurement if necessary, if not from categories, then add an additional field to the product in the form of a checkbox and check it when displaying the price
