Why is the Organization name parameter needed in Exchange?

What is this parameter responsible for when installing exchange (which is the first organization by default), and what will happen if, when migrating from 2010 to 2013, when installing 2013, specify a different organization name?

This is the name of the Exchange organization within the current forest. (All Exchange configuration is stored in this section)
Only needed when identifying Exchange for example in cross-forest/domain migration or other tasks. From my point of view, it does not affect the work. The truth is not sure that with the update you will be able to change the name of the organization.
