It is necessary to look towards MTU/MSS, fragmentation of IPv4 packets. Only tcpdump/wireshark/mikrotik packet sniffer will help you here.

For RDP connections, you should choose those types of vpn that can work through udp. For microts it's ipsec/ikev2.

Subnets (remote, local and VPN) must not match!!! Hence a lot of problems. I suspect that this is exactly what you have, judging by the symptoms and almost default VPN addresses.
Plus, note that your server is running on the default-encryption profile, and clients are connecting with the default profile. Everything you have there is correctly assigned and razruleno?
