Why, if in Adobe Illustrator we convert text to curves, and do a Compound Path Release, do objects with black fill appear inside?

Because there are 2 paths inside the Compound Path. The one that is drawn clockwise is filled with color, and the one that is against is subtracted from the filled one.

when you decompose a compound path, the direction of the path doesn't matter and the result is 2 filled paths.
