Why does Google search rankings change?

Now I am doing SEO optimization, set up meta tags, write unique content for products.
I noticed that the positions of the issue change for two requests, for example, it was:
1 request - the 1st page of Google in 3rd place, it became - 1st page in 8th place;
2 request - 1st page of Google in 7th place, it became - 2nd page 1st place;
I don’t understand what’s the matter at all, why are the positions of issuance in Google changing?
