Why do most (if not all) players of popular video resources lack a stop button?
Well, i.e. you understand, "honest" "stop". To stop the download of the video stream. The context menu in the player from YouTube, for example, does not count. Isn't this relevant? I will not believe. There are pages, for example, with >10-20 episodes, and for example, watch-not-watch becomes clear after the first two seconds. And so on 9 episodes out of 10. The situation is quite common and very, very many acquaintances, including myself, are intuitively searching for the stop button so as not to load the channel.

It seems to me that the point is in the advice of insidious usabilityists. If there was a Stop button, at least half of the users would press it instead of Pause. And of course she spat “well, why does it always slow down after a pause!”. And for some (not a small number), THREE buttons in the interface are already too much, and you can get confused.
In general, for reasons of simplicity, there is no this button.
PS I also really miss her. I hope that with the widespread advent of HTML5, corresponding user-scripts will appear.
So move the video progress slider to the end and load a maximum of 5 seconds ...
In the Youtube context menu (right click on the video itself) there is an item "Stop downloading". The solution through OK, of course, but it works.
if you really want to, you can not wait until the usabilityists change their minds, but put some plugin or user script (there are more of them on the Internet)
