Because it's a checksum.
Approximately for the same reason why it is impossible to find out the value of a byte from the parity bit, but you can only check that all bits came without errors.

Because hashing is not encryption, but the convolution of an arbitrary value to a value from some limited range. Any hash corresponds to an infinite number of possible inputs.
